Spiced Keepers Stout Cupcakes (with cream cheese icing!)

Spiced Keepers Stout Cupcakes

Ingredients

  • 1/2 cup butter or margarine, softened
  • 1 cup brown sugar
  • 1 egg, beaten
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup Keepers Stout beer
  • 1 1/2 cups chopped walnuts

Icing

  • 1 (250 g) brick of Cream Cheese, softened
  • 1/4 cup butter, melted
  • 2  1/2 cups icing sugar
  • 1/2 teaspoon lemon juice
  • 1 teaspoon grated lemon peel

Preparation:

  1. Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9×5 inch loaf pan. Sift together flour, baking powder, cloves, cinnamon, allspice baking soda and salt. Set aside.
  2. In a large bowl, cream the butter and brown sugar until light and fluffy. Add egg and beat well. Add flour mixture alternately with Keepers Stout and mix well to combine. Fold in the chopped walnuts.
  3. Spread mixture evenly between 12 cupcake tins, bake at 350 degrees F for 20-25 minutes. Or if you prefer to bake a loaf, pour into a 9×5 inch loaf pan. Bake at 375 degrees F for 40 to 50 minutes, or until a toothpick inserted into the cake comes out clean.
  4. combine all icing ingredients in a bowl, mix thoroughly and place bowl in fridge for about 10 min.
  5. Allow to cool before icing.
